Since its inception in 1986 and rebirth in May 2010, Belize Boutique Resort and Spa’s cuisine has been a mixture of local organic ingredients with an international flair, “Jungle Nouveau Cuisine”. Our menu is thoughtfully created, prepared for healthy lifestyle and made to order. Ingredients are fresh, thoughtfully selected and created by the guidance of owner Merickston Nicholson, with the precise execution of our local Belizean chefs. With a menu at the discretion of the chef, made to order and modified to individual dietary needs, guests are treated to an indulgent experience of letting themselves be taken care of. Although guests may order a la carte, most choose the Marubian dinner, a three course special which is designed daily to capitalize on the freshest market ingredients, a new recipe or chef’s inspiration, “Gourmet du Funk”.

Breakfast and lunch is served in the open aired Garden Patio or Jungle Tree House accompanied by the beautiful songs of residing birds and an occasional visit from a Humming bird getting its regular intake of nectar from the red hibiscus flowers. Dinners are served in the BirdCage Lounge with intoxicating music, alluring sultry tropical aromas and laughter of those within. Food style includes:
